Grilled Pork Tenderloin and Vegetables with Chocolate Cake for Dessert!

Hi there!

I had the pleasure of having dinner with some friends last weekend and my friend Dave cooked us a delicious and simple meal of pork tenderloin and made three kinds of veggies on the grill. Dave also made a delicious classic American chocolate cake. Oh – and by the way, this was his first time baking a cake! Not too shabby, my friend!

I took some video and wanted to share some pointers and the recipe with you all. I hope you enjoy this as much as we enjoyed eating it!

Grilled Pork Tenderloin

Ingredients:

Pork Tenderloin

Olive Oil

Soy Sauce

Dijon Mustard

Prep: For marinade, mix 2 parts Olive Oil and Soy Sauce to one part Dijon mustard. You can also add some garlic or onion powder. Marinade in the fridge for 24 hours.

Cook: Cook directly on a high grill for 15 minutes. Let rest for 5-10 minutes. Note, Dave poured the remaining marinade on top of the pork tenderloin when it was on the grill to give it more coating. Keep in mind, this might require additional grill clean up - but it sure was tasty!

Grilled Vegetables

Ingredients:

White mushrooms (whole)

Cloves of garlic (whole - Now, whole cloves of garlic are normally way too much for me. But since these were cooked on high heat on the grill, they became so soft that I ended up picking them out of the mushrooms and spreading them on my dinner roll!)

Red peppers (sliced)

Yellow peppers (sliced)

Yellow onion (chopped)

Green onions (chopped)

Broccoli florets

Cauliflower florets

Olive oil

Salt and pepper

Trinidad Spice Mix (kosher salt, lemon peel, garlic powder, cloves and ginger)

Smoked paprika

Cumin

Prep: All of the veggies were tossed with some olive oil, salt and pepper.

For the mushrooms and peppers, Dave used the “Trinidad” mix from the The Spice House in Evanston, Il. This spice mix has kosher salt, lemon peel, garlic powder, cloves and ginger.

For the Broccoli and cauliflower, he used two kinds of smoked paprika and cumin.

Cook: Put veggies in roasting pans. Put roasting pans on a high grill for 20-30 minutes. Check the doneness of the vegetables at 20 minutes.

Note: He used 1 cup of coffee to give the cake a rich flavor.
